Dough Ingredients
  • 1.5 cups warm water Activates yeast for a perfect rise.
  • 2 tablespoons granulated sugar
  • 2 teaspoons salt
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 4 cups all-purpose flour Creates a tender dough.
  • 1/4 cup baking soda Used for the boiling bath.
  • 1 large egg (beaten) For brushing the pretzel bites.
  • Coarse sea salt For sprinkling on top.

Method
 

Preparation
  1. In a large bowl, mix the warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for about 5 minutes, or until it becomes frothy and bubbly.
  2. Add the flour to the mixture and stir until a dough begins to form. Knead the dough for about 5 minutes until it's smooth and elastic.
  3. Place the dough into a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  4. Preheat your air fryer to 450°F (230°C) while the dough is rising.
Cooking
  1. Bring a large pot of water to a boil and stir in the baking soda.
  2. Roll the risen dough into long ropes, then cut them into bite-sized pieces.
  3. Carefully boil the pretzel bites in the baking soda water for about 30 seconds, then remove them with a slotted spoon.
  4. Brush each pretzel bite with the beaten egg and sprinkle coarse sea salt generously over the tops.
  5. Place the pretzel bites in the air fryer basket in a single layer and bake for 12-15 minutes, or until golden brown.
  6. Let the pretzel bites cool slightly before serving.

Notes

Best enjoyed warm. Knead dough effectively for right chewiness. Experiment with flavors by adding spices or cheeses.
