Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, beat the softened butter with the powdered sugar until fluffy and lighter in color.
- Mix in the egg yolk and vanilla extract until smooth and uniform.
- Gradually mix in the flour just until a soft dough forms; do not overmix.
- Roll out the dough and cut circles to fit your tart pans.
- Press the dough circles into the tart pans and fill each with jam or fruit curd, leaving a little space.
Baking
- Bake for 15-20 minutes, until the edges are lightly golden and the filling looks glossy.
- Let the tarts cool in the pans before unmolding.
Notes
For best results, use soft butter (not melted) and avoid overfilling. Cool in the pans for clean release.
