  • 1/2 cup unsalted butter, softened Make sure the butter is softened, not melted.
  • 1 cup brown sugar Brown sugar adds a deep, toffee-like sweetness.
  • 1 piece egg Helps to pull the dough together.
  • 1 teaspoon vanilla extract Adds additional flavor.
Dry Ingredients
  • 1 1/2 cups all-purpose flour Ensure it's measured correctly for best results.
  • 1 teaspoon baking soda Provides leavening.
  • 1/2 teaspoon cinnamon A hint of spice that complements the banana flavor.
  • 1/4 teaspoon salt Enhances flavor.
Optional Ingredients
  • 1/2 cup chocolate chips Optional, adds a nice touch if desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and brown sugar together until smooth and cohesive.
  3. Mix in the mashed bananas, egg, and vanilla until well combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually stir the dry mixture into the wet mixture until just combined; do not overmix.
  6. Fold in the chocolate chips if using.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10–12 minutes, until the edges are lightly golden and the centers are set but still soft.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use very ripe bananas and do not overbake. Store cooled cookies in an airtight container at room temperature to retain chewiness.
