Preparation
- Preheat your air fryer to 350°F (175°C) and prepare the basket with parchment paper to prevent sticking.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the mashed bananas, egg, and vanilla extract until well combined and smooth.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the banana mixture, stirring softly until just combined. Fold in nuts or chocolate chips if desired.
- Scoop spoonfuls of dough onto the parchment-lined air fryer basket, spacing them about 2 inches apart.
Cooking
- Air fry for 10-12 minutes, or until the edges are lightly golden and the centers are soft but cooked through. Check for doneness with a toothpick.
- Let the cookies cool in the basket for a few minutes before transferring them to a wire rack.

Store cookies in an airtight container in the fridge for up to a week or freeze for up to three months. Reheat in the air fryer to restore crispness.
