  • 1/2 cup nuts (optional) Use walnuts or almonds, or substitute with sunflower seeds for a nut-free version.
  • 1/4 cup shredded coconut (optional) For rolling the balls.
  • 1 teaspoon vanilla extract

Preparation
  1. In a food processor, combine the Medjool dates, pumpkin puree, cocoa powder, and vanilla extract. Blend until the mixture is smooth and well incorporated.
  2. If adding nuts, pulse the mixture a few times to break them down into smaller pieces, retaining some texture.
  3. Taste the mixture and sprinkle in a pinch of salt if needed.
  4. With clean hands, scoop portions of the mixture and roll them into small balls, about 1 inch in diameter.
  5. For extra texture, roll some of the balls in shredded coconut until well coated.
  6. Arrange the chocolate date balls on a baking sheet or plate.
  7. Refrigerate for at least 30 minutes to allow them to set and firm up.
