Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, mix the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Assembling the Cookies
- In a small bowl, mix the brown sugar and ground cinnamon for the filling.
- Roll out the cookie dough on a floured surface into a large rectangle.
- Spread the cinnamon-sugar filling evenly over the dough.
- Roll the dough tightly from one side to the other to form a log.
- Slice the log into equal pieces and place them on a baking sheet lined with parchment paper.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies are best enjoyed warm. You can drizzle chocolate or icing on top for a decorative touch, but they are also delicious plain. Store any leftovers in an airtight container.
