Ingredients
  

For the pasta
  • 12 oz fettuccine or any pasta of choice like penne or farfalle
For the sauce
  • 3 tbsp butter can substitute with olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream can substitute with cream cheese or yogurt
  • 1/2 cup parmesan cheese freshly grated for best flavor
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

  • 1 tsp dried thyme or fresh herbs for extra flavor
  • 1/4 tsp red pepper flakes optional for a spicy kick

Method
 

Preparation
  1. Cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a heavy-bottomed saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Cooking
  1. Lower the heat and stir in the heavy cream. Allow it to simmer gently, avoiding a vigorous boil.
  2. Add the grated parmesan cheese and stir until melted and smooth.
  3. Mix in the cooked pasta, adding reserved pasta water gradually to achieve the desired sauce consistency.
  4. Season with salt, black pepper, thyme, and red pepper flakes if using. Stir well to combine.
Serving
  1. Serve immediately, garnished with extra parmesan cheese and fresh herbs if desired.
