Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Chop the mixed vegetables into even-sized pieces for consistent cooking.
  3. In a mixing bowl, toss the cut vegetables with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
Cooking
  1. Arrange the seasoned vegetables in a single layer in the air fryer basket.
  2. Cook for 15-20 minutes, shaking the basket halfway through for even cooking.
  3. Look for the vegetables to turn golden and crispy.
  4. Once cooked, remove from air fryer and garnish with Parmesan cheese or fresh herbs if desired. Serve immediately.

Notes

Cut vegetable pieces uniformly for even cooking. Avoid overcrowding the air fryer to achieve the best texture. Let marinate for 30 minutes for more flavor. Best served hot to maintain crispiness.
