Ingredients
  

For the syrup
  • 1 cup coconut sugar Provides a deep, toasted sweetness
  • 2 cups water To dissolve and simmer the syrup
  • to taste spices (vanilla, almond, and others) Adjust according to preference
To serve
  • 2 cups carbonated water Mix with the syrup to taste
  • 4 cups ice For serving

Method
 

Preparation
  1. Add water and coconut sugar to a pot over medium heat.
  2. Stir until every grain of coconut sugar dissolves, resulting in a smooth, glossy liquid.
  3. Stir in your spices (vanilla, almond, and others) and allow the mixture to simmer for about 20 minutes.
  4. Pour the hot syrup through a strainer to remove spice solids.
  5. Let the strained syrup cool completely.
Serving
  1. In a glass, combine the cooled syrup with carbonated water in your preferred ratio.
  2. Fill glasses with ice, pour in the homemade soda, and stir gently.

Notes

For best results, don’t rush the dissolve step, keep the simmer gentle, and strain while the syrup is still hot. Store the strained syrup in the fridge in a sealed container until ready to mix with carbonated water.
