Preparation
- Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- In a food processor, blend the pitted dates with hot water until a thick, mostly smooth paste forms.
- Pour in the melted coconut oil, then add the eggs and vanilla. Process until glossy and evenly blended.
- In a separate bowl, whisk together the cocoa powder, baking powder, and salt.
- Add the dry mixture to the food processor and pulse just until incorporated.
- Fill the prepared pan with the batter, smoothing it into the corners. If desired, sprinkle dark chocolate chips on top.
- Bake for 20–25 minutes, until the edges are set but the center remains fudgy.
- Let the brownies cool completely in the pan before slicing.
Notes
For a fudgier center, bake until the middle looks set but not dry. Store cooled brownies in an airtight container to maintain texture.
