Preparation
  1. Preheat your air fryer to 380°F (190°C).
  2. Combine the broccoli, carrots, red bell pepper, zucchini, red onion, and minced garlic in a large mixing bowl. Toss to coat the vegetables evenly with the garlic.
  3. Drizzle olive oil over the mixed vegetables, then sprinkle with dried thyme, rosemary, salt, and pepper. Mix well to ensure all pieces are well-seasoned.
Cooking
  1. Arrange the vegetables in the air fryer basket in a single layer for even cooking. Avoid overcrowding to allow hot air to circulate.
  2. Cook for 12-15 minutes, shaking the basket halfway through. Look for the vegetables to be fork-tender and slightly browned.
  3. Top with grated Parmesan cheese if desired, and serve hot.

Notes

Make sure the vegetables are cut into similar sizes for even cooking. Experiment with different herbs or spices based on your preferences. Consider adding a touch of lemon juice before serving for extra freshness.
