Method

Preparation
  1. In a medium-sized bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, and minced ginger until well combined.
  2. Add the sliced chicken to the marinade, ensuring each piece is evenly coated. Let it marinate for about 15 minutes.
Cooking
  1. Preheat your air fryer to 375°F (190°C). Arrange the marinated chicken in a single layer in the basket.
  2. Air fry the chicken for 8-10 minutes, flipping halfway through, until browned and cooked through with an internal temperature of 165°F (75°C).
  3. Meanwhile, heat a skillet over medium heat. Stir-fry the broccoli and sliced red bell pepper for 3-4 minutes until tender yet crisp.
  4. Once the chicken is cooked, combine it with the stir-fried vegetables in the skillet. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For maximum flavor, allow the chicken to marinate longer, up to overnight. Adjust sweetness by altering the honey amount. This dish can be served over rice or quinoa.
