Ingredients

For the cake
  • 4 tbsp All-purpose flour
  • 1 tbsp Granulated sugar
  • 1 tbsp Milk Can substitute with any plant-based milk
  • 1 tbsp Vegetable oil Can substitute with melted butter
  • 1/4 tsp Baking powder
  • 1/4 tsp Vanilla extract
For the cinnamon swirl
  • 1 tbsp Brown sugar
  • 1/2 tsp Ground cinnamon
For the glaze (optional)
  • 1 tbsp Powdered sugar Add milk to reach desired consistency

Method

Preparation
  1. In a microwave-safe mug, mix together the flour, granulated sugar, baking powder, milk, vegetable oil, and vanilla extract until smooth.
  2. In a small bowl, combine the brown sugar and cinnamon to make the cinnamon swirl.
  3. Pour half of the cake batter into the mug, sprinkle the cinnamon swirl mixture evenly over the top, then add the remaining batter on top.
  4. Gently swirl the batter with the tip of a spoon to create a cinnamon ribbon.
Cooking
  1. Microwave on high for 60-90 seconds, checking at 60 seconds for doneness. The cake should look set but still tender in the middle.
  2. Allow it to cool for a minute before enjoying.
Serving
  1. If desired, drizzle a simple glaze on top before serving by mixing powdered sugar with a little milk.

Notes

For best results, use a larger mug to prevent overflow. Add a little more cinnamon if you prefer a bolder flavor. Let the mug cake sit briefly after microwaving to set before eating.
