Cooking

- While the potatoes are cooking, heat a skillet over medium heat and add the ground meat. Cook until browned, draining the excess fat once it's fully cooked.
- Add the taco seasoning to the browned meat, along with a splash of water, and let it simmer for 3-4 minutes until heated through.
Assembly
- To assemble the bowls, start with a generous layer of the roasted potatoes.
- Top with the seasoned meat, then sprinkle on the black beans, corn, diced tomatoes, and avocado.
- Finish with a sprinkle of shredded cheese, followed by a dollop of sour cream and a handful of lettuce. Serve immediately.
