Ingredients
  

For the Potato Base
  • 2 large potatoes, cubed Use russet or Yukon gold for best results.
  • 1 cup olive oil For tossing the potatoes.
  • to taste salt and pepper Adjust according to preference.
For the Taco Filling
  • 1 lb ground beef or turkey Choose your preferred meat.
  • 1 packet taco seasoning To flavor the meat.
  • 1 cup black beans, drained and rinsed Adds fiber and texture.
  • 1 cup corn For sweetness and crunch.
  • 1 cup diced tomatoes Fresh or canned are both fine.
  • 1 avocado diced Adds creaminess.
  • 1 cup shredded cheese Choose your favorite cheese.
  • to taste sour cream For serving.
  • to taste lettuce For serving on top.

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C) to ensure the potatoes become perfectly crispy.
  2. In a bowl, toss the cubed potatoes with olive oil, salt, and pepper until well-coated.
  3. Spread them in a single layer in the air fryer basket.
Cooking
  1. Air fry the potatoes for about 20 minutes, shaking the basket halfway through to achieve an even crisp and golden color.
  2. While the potatoes are cooking, heat a skillet over medium heat and add the ground meat. Cook until browned, draining the excess fat once it's fully cooked.
  3. Add the taco seasoning to the browned meat, along with a splash of water, and let it simmer for 3-4 minutes until heated through.
Assembly
  1. To assemble the bowls, start with a generous layer of the roasted potatoes.
  2. Top with the seasoned meat, then sprinkle on the black beans, corn, diced tomatoes, and avocado.
  3. Finish with a sprinkle of shredded cheese, followed by a dollop of sour cream and a handful of lettuce. Serve immediately.

Notes

For best results, use fresh ingredients and enjoy the bowls warm. You can also prep ingredients ahead of time and store components separately.
