Method
 

Preparation
  1. In a large bowl, mix the almond butter with the honey (or maple syrup) until it looks cohesive and shiny.
  2. Add the rolled oats and cinnamon. If using, add the chopped nuts and raisins or chocolate chips, followed by vanilla extract and coconut oil.
  3. Stir well, scraping the bottom and sides of the bowl to ensure the mixture is uniform.
  4. Scoop portions of the mixture and shape them into cookie rounds between your palms, pressing firmly.
  5. Place the cookies on a baking sheet and refrigerate until firm.

Notes

Best served cold for a chewy texture. Aim for a thicker cookie shape for better firmness. Store in an airtight container in the fridge.
