Method
 

Preparation
  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), powdered sugar, cinnamon, vanilla extract, and a pinch of salt. Mix thoroughly until the ingredients are well combined and form a dough-like consistency.
  2. Roll the dough into 1-inch balls and arrange them on a parchment-lined baking sheet. Gently flatten each ball to create a round cookie shape.
  3. Refrigerate the cookies for at least 30 minutes to allow them to firm up.
  4. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and glossy. Adjust the milk as needed for desired glaze consistency.
  5. Once the cookies have firmed up, drizzle the glaze over each one and allow the glaze to set.

Notes

Chill the dough if too sticky, adjust sweetness by reducing powdered sugar, and store in an airtight container in the refrigerator for up to a week.
