Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with butter or line it with parchment paper.
- In a large bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt. Mix until well blended.
- In a separate bowl, stir together the melted butter, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until just combined, being careful not to overmix. Fold in the chocolate chips.
Baking
- Spread the mixture evenly in the prepared baking pan, pressing it down lightly.
- Lightly sprinkle a pinch of sea salt over the top.
- Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container for 3-5 days or freeze for longer storage. For variations, add chopped nuts or use a mix of dark and milk chocolate chips.
