  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan with butter or line it with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt. Mix until well blended.
  3. In a separate bowl, stir together the melted butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined, being careful not to overmix. Fold in the chocolate chips.
Baking
  1. Spread the mixture evenly in the prepared baking pan, pressing it down lightly.
  2. Lightly sprinkle a pinch of sea salt over the top.
  3. Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
  4. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container for 3-5 days or freeze for longer storage. For variations, add chopped nuts or use a mix of dark and milk chocolate chips.
