Preparation
- Preheat your air fryer to 400°F (204°C).
- Trim the ends of the asparagus and cut the carrots into even-sized pieces.
- In a mixing bowl, toss the asparagus and carrots with olive oil, minced garlic, salt, and pepper.
Cooking
- Spread the coated vegetables in a single layer in the air fryer basket.
- Air fry for about 15-20 minutes, shaking the basket halfway through.
- Check for tender and lightly caramelized veggies, golden-brown in color.
Serving
- If desired, sprinkle fresh lemon juice and grated Parmesan cheese before serving.
Notes
Cut the carrots similar in size to the asparagus for even cooking. Monitor the last few minutes of cooking to avoid burning. Allow to cool briefly before serving for flavor melding.
