Preparation
  1. Preheat your oven to 325°F (160°C). Line two lightly colored baking sheets with parchment paper and set aside.
  2. In the bowl of a stand mixer, combine the softened butter, powdered sugar, vanilla extract, and all-purpose flour. Mix on low speed until the mixture appears crumbly and well combined.
  3. Form the dough into a ball and roll it out between two sheets of parchment paper to a thickness of about 1/3-1/2 inch.
Baking
  1. Use a cookie cutter to cut out small 3-inch circles or any shape you prefer. Transfer them to your prepared baking sheets, spacing them about an inch apart.
  2. Bake for 12-15 minutes or until the bottoms are just barely golden brown.
  3. Allow the cookies to cool on the hot baking trays for 5 minutes before transferring them to cooling racks.

Notes

Store the cookies in an airtight container for up to 5 days. They can also be frozen for up to 3 months. Wrap tightly to prevent freezer burn.
