  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon unsalted butter, melted
  • 3 tablespoons milk
  • 1/4 teaspoon vanilla extract
Cinnamon-Sugar Topping
  • 1/2 teaspoon cinnamon for topping
  • 1 teaspoon sugar for topping

Method
 

Preparation
  1. In a microwave-safe mug, stir together the flour, granulated sugar, baking powder, and salt until evenly combined.
  2. Pour in the melted butter, milk, and vanilla extract. Stir well until you have a smooth batter with no dry pockets.
  3. In a small bowl, mix the cinnamon with the sugar for the topping.
  4. Sprinkle the cinnamon-sugar mixture evenly over the surface of the batter.
  5. Microwave on high for about 1 minute 30 seconds, until the cake has risen and the top looks set.
  6. Let it cool for about 1 minute before enjoying straight from the mug.

Notes

For best results, use a mug with some headroom. Don’t overcook the cake, and let it rest for a minute before eating.
