Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened Make sure it's not melted.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
Main Ingredient
  • 1/2 cup chopped dried or fresh mango Fresh or dried mango works well.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until fully integrated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  6. Gently fold in the chopped mango.
Baking
  1. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them apart.
  2. Bake for 10-12 minutes, or until the edges are golden brown and centers are set but still slightly soft.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, try toasting the chopped mango slightly before adding. Store cookies in an airtight container to keep them soft.
